After careful hand-harvesting and selection of the finest Rkatsiteli grapes, the fermentation process is initiated in temperature-controlled stainless steel tanks. This method allows for precise control over the fermentation temperature, typically kept between 14–16°C (57–61°F). By maintaining this cool fermentation environment, the winemaker ensures that the wine retains its delicate fruity aromas and preserves the natural sugars essential for achieving a semi-dry style.
